Creamy White Bean & Sausage Soup

Step 1: Pour 2 cups of vegetable stock and 2 cups of water into a pot and season with 1/2 tsp each of salt, pepper, and crushed red pepper.

Step 2: Add in beans and cook on simmer for 50 minutes or until tender.

Step 3: Saute onion, celery, and garlic in olive oil.

Step 4: Cook sausage until browned and crispy. Drained and set aside.

Step 5: Add onion, celery, and garlic mixture to cooked beans.

Step 6: Remove 2 cups of the bean mixture and blend in blender until smooth. Add the creamed beans back to the rest of the beans in the pot.

Step 7: Add in cooked sausage pieces.
