One of our favorite thing to do is grilling. I usually have to wait for my husband to start the grill, but not anymore. We finally got a gas grill, and starting it is just like using a stove. I’m looking forward to doing a lot of grilling this summer.

MEXICAN STREET CORN (ELOTE)

Today I’m sharing my spin on Mexican street corn (ELOTE). The first time I had elote was in New York a few years ago, and it was amazing.

WHAT IS ELOTE?

In Mexico, corn on the cob is popular street food. Traditionally it is topped with mayo, lime, cotija chees, chile powder, and cilantro and eaten on a stick.

I think this would make the perfect side for any meal. It would be a hit for Memorial Day or the 4th of July.  I think the key to this recipe is to cook the corn properly. 

COOKING TIP: I make sure the grill is properly heated so my corn cooks evenly and gets the grill marks

TIPS FOR MAKING MEXICAN STREET CORN (ELOTE)

I like to top the corn as soon as it comes off the grill. This allows the mayo and cheese mixture to get all gooey and yummy.

I mix equals cotija and parmesan cheese for the cheese mixture. I love the nutty flavor the parmesan cheese adds to the bite. I think this corn would be perfect to pair with grilled burgers, hot dogs, or even a delicious steak.

Yield: 4

EASY MEXICAN STREET CORN-ELOTE

Prep Time: 5 minutes
Cook Time: 10 minutes
Total Time: 15 minutes

Looking for an easy treat when you are grilling. This corn is a perfect treat to eat whether relaxing by the pool or to serve along with any dinner. This is traditionally topped with cotija cheese. I added parmesan for an extra nutty flavor.

Ingredients

  • 4 ears of corn, husked
  • 1 Tbsp vegetable oil
  • 1/3 c mayo
  • 1 tsp lime juice
  • 1/4 c cotija cheese, crumbled
  • 1/4 c Parmesan cheese, grated
  • 2 tsp chili powder
  • 1/4 c cilantro, chopped

Instructions

  1. Heat grill to 400 degrees
  2. Mix mayo and lime together and set aside
  3. Coat corn in vegetable oil
  4. Place corn on grill and cook on each side for 2 minutes
  5. Remove corn from grill and brush with mayo mixture immediately
  6. Sprinkle generously with cheese
  7. Top with chili powder and cilantro (optional)
  8. Serve immediately

Greetings, I hope this post finds you well. If you follow me on my Instagram stories, you may know that we are in the middle of a mini kitchen remodel. I adored my kitchen the way it was, but life always happens, so I am taking advantage of upgrading some items. I also decided to get rid of some things that I never use. This leads me to share my top five kitchen must-haves for any kitchen. Whether you are revamping your kitchen, decluttering, moving into your own place, or helping that recent graduate move into his/her new place, these top five kitchen items are a must-have in any kitchen.

I guess the saying old saying, “With age comes wisdom,” is true. I have finally come to appreciate some key must-haves in my kitchen and realize that quality is of most importance, or you will continue replacing these frequently. CAST IRON SKILLET This is one of my favorite items in my kitchen. It’s perfect for searing a steak to making your favorite casserole dish. From oven to table, it is ready to go. I must admit I wasn’t super impressed with my cast iron skillets when I first got them. It took some time to get them seasoned and ready for use. I now have 3 in varying sizes, and I use one at least once a week.

INSTANT POT This is by far a game changer. I have been the owner of an instant pot for almost 4 years now, and it has proven well work the money repeatedly. There have been times when I didn’t think about dinner, and the instant pot has saved the day. These can be used for numerous things. I typically use mine for any meats that I would normally slow cook for hours; this thing will cut your cooking time in half. 

MIXING BOWLS What is a kitchen without mixing bowls? I actually have 3 sets of mixing bowls. These definitely come in handy when you are baking or following any recipe. I recommend a set that comes with lids, so if you have to refrigerate it or leave it for some time, your food or ingredients are protected.

CHEF’S KNIFE This is my go-to knife in my kitchen. I’ve learned that a dull knife is more dangerous than a sharp knife over the years.  This knife is an all-purpose cook’s knife and can be used for chopping, mincing, slicing, and dicing. If you have the budget, I recommend investing in a great set of knives. Also, be sure to care for your knives according to the manufacturer’s recommendations. 

COOKING UTENSIL SET Every kitchen needs a great set of cooking utensils. Whether you are frying, baking, or mixing the perfect utensil is always needed. I have two sets; please don’t judge. You know my favorite colors are blue and gold, so I have a set in each color.

Greetings, I hope this post finds you well. Thinking of treating mom to something different this year. How about hosting a generational afternoon tea party.  I remember hosting a generational tea party about five years ago and it was unforgettable. The hardest part of the planning was locating the perfect teacup set. A generational tea party is perfect for moms of all ages.

I love mixing the old with the new; it not only speaks to my grand millennial style, but it is also sustainable. I was able to thrift my teacup and saucer set from an estate sale along with my floral teapot.

What do you need to host an afternoon generational tea party? Guest, tea sandwiches, scones, desserts, and of course tea. Traditional afternoon tea is normally served between lunch and dinner and is accompanied by light treats. I sharing all the hosting tips and tricks below on how to make a generational afternoon tea party a hit.

Black Tea

Earl Grey tea is probably the most famous black tea blend in the world. It has a citrusy, sweet flavor thanks to the bergamot oil. Earl grey tea pairs best with afternoon tea sweets.

Tea Sandwiches

I opted to serve chicken salad sandwiches, egg salad rolls, and cucumber dill sandwiches. The chicken and egg salad sandwiches can be prepared a day ahead. I don’t recommend doing the cucumber sandwiches until the day of your event. You can however slice the cucumbers ahead of time and place them in a Ziploc bag.

Scones

Here’s the perfect time to showcase your baking skills. If you have that perfect scones recipe it’s time to share it with your friends. No worries if you don’t bake or if you are short on time. Check with your local bakery or fresh market they usually have fresh scones daily.

Desserts

Don’t wear yourself out when it comes to preparing your dessert.  I was able to get macaroons and 2 bite brownies from our local Oak Point Market.

The last afternoon tea party I held was a few years ago. I don’t think we follow all the hard fast rules of a proper tea party, so  I did find a guide that details the do’s and don’t of a tea party for reference.

Hosting Tip: If you are hosting a tea party at your house, you can use anything from a simple teapot or kettle to something culturally traditional, like a cast iron pot to brew tea. Cast iron teapots can improve the taste of tea, especially if they have been passed down from previous generations.

It’s almost that special day to celebrate your favorite mom.  As a foodie and entertainer, I love getting items I can use and spread more love. I have rounded up some of the best Mother’s Day presents I have on my wishlist list.

I’ve had this massager in my Amazon cart for over four months now. If I don’t receive this for Mother’s Day from either my husband or son I plan on going on a cooking strike for a week.

What are your favorite Easter memories? Believe it or not, for me it was getting an Easter dress to wear to church when I was young. I believe this went on until I was at least 13, for that reason I always wanted to have a girl so I could play dress-up.

Fast forward to today my joy for Easter has not only shifted to understanding the meaning of Easter but also my love for Easter eggs has grown. I recently took a deeper dive To find out what Easter eggs symbolize. According to history.com “The egg, an ancient symbol of new life, has been associated with pagan festivals celebrating spring. From a Christian perspective, Easter eggs are said to represent Jesus’ emergence from the tomb and resurrection. Decorating eggs for Easter is a tradition that dates back to at least the 13th century, according to some sources. One explanation for this custom is that eggs were formerly a forbidden food during the Lenten season, so people would paint and decorate them to mark the end of the period of penance and fasting, then eat them on Easter as a celebration.” (Source: History.com) Nowadays there are so many creative ways to decorate Easter eggs it is amazing. One of my favorites is the chinoiserie print.

Easy DIY Candy Shine Easter Eggs

This year I tried Easy DIY Candy Shine Easter Eggs. I recommend dying the eggs a few days in advance and adding the gloss over drinks with family or it can be done with the kiddos too. The Candy Shine Easter Eggs were super easy and I love the beautiful shine effect as they were displayed on my dining table. We plan on starting an annual Egg hunt with Chubbs this year. Yield: 12 servings

Fresh Spaghetti Salad

Prep Time: 15 minutes
Cook Time: 8 minutes
Additional Time: 4 hours
Total Time: 4 hours 23 minutes

Looking for a fresh and tasty salad for the spring and summer months. This mouth-watering crowd-pleaser takes less than 20 minutes to prepare. It's perfect to make a day ahead to free up your time for more entertaining.

Ingredients

  • 2 C cooked spaghetti
  • 1 container of cherry tomatoes, halved
  • 5 mini cucumbers, diced
  • 1 green pepper, diced
  • 1 red pepper, diced
  • 1 red onion, diced
  • For the sauce/dressing
  • 1 bottle of Italian dressing.
  • 1/2 C Parmesan cheese, grated
  • 1 Tbsp of sesame seeds, toasted
  • 2 tsp seasoning salt
  • 1 tsp paprika
  • 1/2 tsp garlic powder
  • 1/4 tsp of celery seeds

Instructions

  1. Cook pasta according to package and let drain.
  2. Add prepared vegetables to drained pasta; combine well, and set aside.
  3. Pour dressing into a bowl and add cheese, sesame seeds, seasoning salt, paprika, garlic powder, and celery seeds. Mix well.
  4. Lastly, pour sauce over mixed pasta and vegetables and toss well.
  5. Cover well and let chill in the refrigerator for at least 4 hours.

STYLING FAKE PLANTS AN EASY DIY

 

YOUR GUIDE TO STYLING FAKE PLANTS

Here’s a quick tutorial on how to jazz up fake plants. Whether indoor or outdoor your neighbors and friends will definitely envy your green thumb.

What She’s Wearing

 

If you ever visit my home, you will know who primarily has the green thumb. Yes, you guessed it right, my husband. I for one was not prepared for the amount of wildlife activity that occurs when you are surrounded by water and the woods.  I have seen my fair share of snakes; therefore during the spring and summer months, I leave the gardening to my husband. This year I still wanted plants on my porches; I have the great idea of trying out fake plants. So here’s my take on styling fake plants.

Plant(s). The first step is picking your plant(s). I have wanted lemon trees for a while. We have a few real ones in the yard, but I think the yellow looks perfect against my chinoiserie planters so I opted for lemon trees. This tutorial will work for any fake plant.

Planter(s). I am partial to any chinoiserie planter or anything blue and white. So have your pick. The perfect planter really makes the project pop. The best places to get planters at a great price are Tuesday Morning, TJ Maxx, HomeGoods, and Marshalls.

Potting Soil. You can choose any soil you like here. Remember, if you are potting a fake plant, it doesn’t need to be filled with fertilizer. I used some of my husband’s bulk gardening soil.

Moss. This moss definitely makes the plant look even more realistic. The lemon trees used in this tutorial came with moss. I also added some additional moss I picked up from Hobby Lobby.

Now depending on the number of plants you are potting, this project takes less than 5 minutes per plant. The first thing I do is make a flat base in the planter for the plant to sit on. These particular planters had grooves in the bottom for draining, so I added a layer of soil on the bottom to make my plants sit flush. I then secured the plant in its position by adding soil around it. From there, I fill the planter will soil as I would planting a real plant. 

Last but definitely not less, I added moss. Normally when planting a real plant, I use moss to hold the moisture in so I don’t have to water as much. Now if you decide to try this, please let me know. Your secret will be safe with me! Omniley.

PORCH BED SWING SPRING UPDATE

Hi, Y’all! One thing that I had on my wishlist and prayed for in our forever home was to have six exterior columns and a porch. Yes, I was so specific on the number of columns…why? There was a gorgeous home in our previous neighborhood and I adored the six front-facing white exterior columns. So of course I always had the columns and a porch on my wishlist. What’s a Southern Belle without an awesome porch? I have so many memories of being on the porch with my NaNa and I had hopes of sharing long talks with her on my porch. Unfortunately, she passed away before we moved into our current home. I still feel she is with me when I sit on my porch bed swing. I often have thoughts of us fishing in the lake or better yet her fishing and me sitting on the porch, because I’m afraid of snakes.

That’s one of the reasons I make sure my porch bed swing is decorated seasonally, so she can look down and smile. If you guys remember this is the DIY Porch Bed Swing my husband and son made for me two years back and it is still holding strong. If you want more on the DIY it can be found here.

It is my goal to spend a lot of time here this spring and to enjoy a nice glass of wine or one of my favorite bourbons occasionally. I don’t usually spend a lot of time here when summer hits, because the porch swing is lake-facing and typically the snakes are on the move. A story for another day. So on to the spring refresh.

So what updates did I do? I added a fabulous new planter and potted a lemon tree. Now for a little secret…can you believe this tree is fake? I also flipped my rug to the other side and it is giving the porch a new life. This year it doesn’t look like we will have to do anything to the porch swing cushions; they held up well after we repainted the fabric last year.

JENNIFER ANISTON SALAD

Greetings! I hope this post finds you well. I finally got around to adding my flair to the Jennifer Aniston’s Salad. I must admit I can tell what all the rave is definitely about. According to sources, Jennifer ate this salad religiously for 10 years on the set of F.R.I.E.N.D.S. So I did a little digging and a lot of sources refer to Jennifer Aniston salad as a Cobb Salad, but this salad is far from a Cobb Salad.

Now the original recipe calls for bulgur. What’s bulgur? That’s the same thing that I asked myself.

Bulgur. Parched cracked wheat, according to Webster Dictionary.

I was unable to locate bulgur, so I opted to use Seeds of Change Quinoa & Brown Rice with Garlic. I think it added a very tasty flavor to the salad. I will continue to look for the bulgur to compare the flavor profile and be sure to update you all.

Now let’s talk more about this salad. I’m always looking for a filling and hearty meal, so let me tell you this salad checks all the boxes. The garbanzo beans or chickpeas make this dish an entree on its own. I also used roasted and salted Pistachios and I don’t regret it a bit. I can definitely see why Jennifer Aniston ate this salad daily, it is the BOMB.com.

The Jennifer Aniston Salad is super versatile I had been eating it as an entree, but I can also see serving it as a side salad. If you have to have meat on your salad ground turkey or grilled chicken would be a great addition also. I would suggest trying the salads as it is and then deciding if you want to add more protein.  I can’t was to serve this at our next get-together and see how wowed everyone is by it.

Yield: 3

Jennifer Aniston's F.R.I.E.N.D.S Salad

Prep Time: 5 minutes
Total Time: 5 minutes

A fresh hearty salad that is easy to make and taste great.

Ingredients

  • 1 C quinoa
  • 2 mini cucumbers, diced
  • 1 can of chickpeas, reduced-sodium drained, and rinsed
  • 1/2 C pistachios
  • 1/2 C feta, crumbled
  • 1/3 C red onion, finely diced
  • 2 Tbsp parsley, finely chopped
  • 1 Tbsp mint, finely chopped
  • 2 mini cucumbers, diced
  • Olive oil
  • splash of lemon juice
  • salt and pepper to taste

Instructions

  1. Add all ingredients to a large bowl and toss lightly.
  2. Serve immediately or store in an airtight container for up to 48 hours.

BLUEBERRY LEMON OVERNIGHT OATS

Did you make any resolutions this year that had to do with taking better care of yourself? While I don’t do resolutions, I definitely made a commitment to focus on myself more and that includes taking care of my body.

How am I doing that? I’m back at the gym like I never left it and I am eating better. I started back with my overnight oats; I forgot how nourishing and easy of a breakfast option they are. So it’s a must that I share it with you all today.

One of the great things about overnight oats is that you can get super creative with your ingredients. Today I’ll be sharing with you my take on Blueberry Lemon Overnight Oats. If you follow me on Instagram you know I recently partnered with Dannon’s Light and Fit and found myself with some extra Greek yogurt on my hand and I thought to myself??? You guessed it right I’m using Lemon Cream Greek yogurt in my overnight oats. This is some next-level deliciousness, you guys.

You only need a few staple ingredients to make overnight oats.

  1. Oats. Make sure you are using rolled or old-fashioned oats. Please don’t use instant oats-epic fail!
  2. Almond milk. Any milk of choice will work here guys.
  3. Yogurt. Please don’t skip this one-these makes your oats oh so creamy.
  4. Sweetener. I use maple syrup or honey-whichever I have on hand at the time.
  5. Fruit. Whatever you are in the mood for will work well.
  6. Nut butter. I love Smuckers Organics Chunky Peanut Butter.

The great debates when it comes to overnight oats…

Will you eat your oats cold or hot? I myself like to heat mine up-so so good!

Are you topping or not? If you choose to add toppings the possibilities are endless. Coconut, granola, peanut butter, almond butter, trail mix, or anything you like.

Blueberry Lemon Overnight Oats

Prep Time: 5 minutes
Cook Time: 2 minutes
Total Time: 2 minutes

These Blueberry Lemon Overnight Oats are a nourishing and easy breakfast. Make them ahead of time for a quick and easy treat.

Ingredients

  • 1/2 C old-fashioned oats
  • 1/2 C almond milk, plain, unsweetened
  • 1/3 C Lemon, greek yogurt
  • 1/4 C blueberries
  • 1/2 tsp maple syrup
  • pinch of salt

Instructions

1. Mix together all ingredients and give them a stir. Refrigerate overnight or for at least 6 hours.

2. In the morning, place in the microwave for 1 minute or you can eat cold. Add toppings of your choice.
