Greetings. I hope this post finds you well. My family may be one of the few that haven’t dined out in almost a year. If you are like us or want to plan an at-home easy meal for valentine then look no further. I have always been a steak lover and finally got my husband on board about two years ago. We only have a few places on our list that can cook a steak to our liking so we learned how to prepare them ourselves and they are hands down the best.

Last year we dined out at Flemings for Valentines and caught the Lovers and Friends concert afterward since no concerts are going on this Valentine, I’m here to replay the night home style.


The most important thing I believe is your cocktail or wine. Thanks to Wente we have a perfect Cabernet to pair with our steak.

Now to get to the rest of the perfect at-home Valentine’s celebration. We love a bone-in rib-eye at least 3/4-1” thick. Walmart has a great selection of steak at great prices. We normally like twice-baked potatoes with our steaks, but since we planned on saving room for dessert we opted for oven-roasted green beans. If you like a lighter option try my Honey-Glazed Salmon.

What better dessert option than a light and fluffy strawberry trifle. To keep it on the lighter note, I used sugar-free angel food cake, instant pudding, whipped cream, and almond milk. It’s the perfect balance with sweetness from the strawberries.

Cast Iron Seared Steak

Prep Time: 10 minutes
Cook Time: 20 minutes
Resting Time: 30 minutes
Total Time: 1 hour

Equipment

  • cast iron skillet 9"
  • Oven

Ingredients

  • 1 lb steak, ribeye bone-in 3/4"-1" thick
  • 4 tbsp butter, unsalted
  • Kosher salt, coarse
  • sea salt
  • black pepper

Instructions

  • Coat steak on both sides generously with coarse Kosher salt; use meat cleaver on both sides to break the steak down; place in refrigerator for at least 45 minutes
  • Remove steak from refrigerator and rinse well; (avoid allowing steak to touch the sink)
  • Dry steak thoroughly with paper towels and season with salt and pepper on both sides.
  • Preheat oven to 450° (convention method preferred)
  • Mean while place 2 tbsp of butter in 10” cast iron skillet and heat on high. Watch closely• When hot, sear both sides of the steak for 2-3 minutes. Sear close to the final color you want. Transfer pan to the preheated oven.
  • Now comes the variables. The steak thickness, how long you seared, and the true temperature of the oven. It takes about 7-8 minutes to get to about 145°(medium). Remove from the oven and allow to rest for a few minutes before serving. Cook to the proper temperature; not by time.
  • Remove from oven and top with remaining butter. Remember the steak will continue to cook when removed from oven. Allow to rest for at least 15 minutes.
  • Top with caramelized onions and mushrooms. Serve immediately.

Ingredients

  • 4 fish fillets
  • 2 Tbsp mustard
  • 2 tsp creole seasoning
  • 1 tsp ground mustard
  • Wet Mixture
  • 1/2 c milk
  • 1 egg
  • splash of Red Hot sauce
  • 1 tsp ground mustard
  • Oak Grove Fish Fry or fish fry of choice

Instructions

  • Coat fillets with creole seasoning, ground mustard, and wet mustard. Let sit for 5-10 minutes.
  • For wet mixture: mix together egg, milk, hot sauce, and ground mustard.
  • Quickly place the fillets in wet mixture and put in Ziploc bag.
  • Add fish fry mix to bag and coat fillets well.
  • Fry at 375° for 7-10 minutes.
  • Place on paper towels to drain excess oil. Serve immediately.

Greetings. I hope this post finds you well. My husband has been so happy since football season has started back up. This year his gatherings have been definitely been a little different. Even though we have been adjusting to the current times, that still won’t stop me from entertaining my boys.

I’m scaling back on portion sizes this year for the Big Game, but definitely not on taste. Working from home continues to come with changes and challenges. I love any meals with convenient options. Let me brag really quick about my Walmart+ membership. It provides me with the flexible of pickup, delivery or scan ’n’ go when shopping in the store. Also when I’m in a pinch they have an express delivery option, and it is awesome.

Now, back to a game time hack that can also double as lunch or dinner the next day. Queso Fundido one of our all-time favorites. Typically, I make a large batch of this for the guys and their friends but since our gatherings are smaller right now, I was smart about the amount I prepared. The best thing is that this recipe is so simple and tasty, if you have any leftovers you can place the mix over noodles or bake with tortillas and make a casserole.

I recommend using Walmart pickup or delivery if it is available in your area. Shopping at your fingertips. I also picked up some Dixie® To Go cups, which are great to keep hot drinks hot and are super convenient. Don’t forget the rest of your paper products, such as Sparkle Paper Towels (a great value!) and Dixie® Ultra Plates, so you can skip doing dishes after game time. Gather your ingredients and let’s get started.

Heat broiler. Crumble chorizo into skillet; cook on medium heat until done, stirring occasionally. Drain.

Sprinkle mozzarella onto bottom of 9-inch pie plate or cast iron skillet.

Top with chorizo, tomatoes and Velveeta cubes. Broil, on middle oven rack, 15-20 minutes or until heated through.

Serve with french fries and sliced veggies.

VELVEETA Queso Fundido

Prep Time: 20 minutes
Cook Time: 15 minutes
Total Time: 35 minutes

Ingredients

  • 6 ounces Mexican chorizo
  • 1 cup KRAFT Shredded Low-Moisture Part-Skim Mozzarella Cheese
  • 1 can (10 ounces) RO*TEL Diced Tomatoes & Green Chilies, drained
  • 8 ounces VELVEETA Queso Blanco, cut into ½ inch cubes
  • 1 (32 ounce) bag ORE-IDA Golden Crinkles French Fried Potatoes (for serving)
  • Sliced veggies (for serving)

Instructions

  • Heat broiler.
  • Crumble chorizo into skillet; cook on medium heat until done, stirring occasionally. Drain.
  •  Broil, 6 inches from heat, 15 to 20 minutes or until heated through.
  • Serve with french fries and sliced veggies.

Notes

Leftover dip can be used as fillings for tortilla pie or served over noodles for dinner.
